I hope you’re having a fabulous week. I’ve been asked a lot lately about what we eat. Our family has been through a refining process over the past 2 years, and we eat much more “clean” and “whole” now. We have adopted the mindset that food is either making us sick or keeping us well. Are we eating food that is poison in our bodies, or are we eating food that is working like healing medicine in our bodies? Our journey has led us to eat a mostly vegan diet in the home.
Today I’m giving you an idea of what is on our typical weekly menu. I do not meal plan, by the way. We have pantry staples and meals just come together on the day. I am uninterested in planning the week’s meals in advance. On the day, I like to eat what I feel like. I’m fascinated by my friends that diligently meal plan (it actually looks stressful to me). Brad and I share the meal preparation duties in our home. He is a bit of a master in the kitchen at times (thank the good Lord).
Where do you grocery shop? We pretty much only shop at Costco, Down to Earth, and Wholefoods. I prefer Down to Earth because it seems to be cheaper than Wholefoods most the time (and it is much closer).
Monday – Friday the girls and I enjoy a huge cup of green smoothie (our recipes to come, but you cancheck this website out for lots of great ideas). My friend the Vitamix is a champion at blending our morning meals.
We stopped drinking caffeinated coffee in December 2013. Sometimes we drink it while we’re out, but in the home we drink decaf coffee with organic rice milk or coconut milk.
On Saturdays, Brad will usually make vegan oat pancakes with banana or blueberries topped with maple syrup.
On Sundays, if we have time before church we’ll either have cereal, pancakes, Ezekiel bread toast and eggs, or a quick smoothie.
Morning snack ideas
Organic apple slices with organic peanut butter (ALWAYS organic apples and the Kirkland Signature brand peanut butter from Costco)
Organic apple sauce pouch (Kirkland Signature brand from Costco)
Fresh fruit or dried fruit (We always try to buy organic)
Crackers (Ryvita or ak mak from Down to Earth)
Fig bar (the nature’s bakery ones from Costco)
Vegan veggie patty or black bean burger from the freezer aisle at Costco
Annie’s Lentil Soup (yes, from the can)
Fried egg on a piece of Ezekiel bread toast
Tuna fish salad (Veganaise, celery, turmeric, Spike seasoning) on crackers or a bed or organic greens
Leftovers from dinner the night before
A vegetable – usually steamed broccoli, cucumber sticks, or avocado
Afternoon snack ideas
Organic, non-GMO edamame (the frozen packs from Costco)
Nuts (almonds) and a dried fig
Celery and peanut butter or hummus
Vegan chilli with brown rice
Mexican bowls: bed of organic greens, brown rice, black beans + corn, sautéed bell peppers + sweet onion, topped with salsa and nutritional yeast
Sprouted wheat tortilla wrap with brown rice and sautéed veggies soaked in homemade peanut sauce
Vegan veggie patty or black bean burger topped with avocado and salsa served with a green salad
Warm quinoa or farro salad: beets, sautéed sweet onions, grated carrots, large handfuls or organic kale or spinach greens, artichoke hearts, sunflower seeds or sliced almonds, tomatoes, avocado, cucumber, red onion. Drizzle avocado oil and balsamic vinegar and season with salt and pepper.
Gardein faux chicken (mandarin orange) with brown rice and steamed broccoli
Falafels with salad
Veggie pasta or brown rice pasta with homemade organic red sauce with lots of veggies
